Portuguese food and cooking are a little like the people themselves; vibrant, warm, spicy and a little mysterious and there is a veritable smorgasbord of traditional and exotic food to satisfy every taste at the 3-day Madeira Fest, taking place at Casa de Madeira, 46 Goodwood Rd, Newmarket AH, Alberton from 30 September to 2 October 2022.
The cream of Gauteng`s cookeries will be serving up delicious offerings like pregos, chourico, trincahado, prawns and carne vinho de alhos for the thousands of Festival visitors. Restaurants include:
- Taskinkha, who in addition to the above, offer the mouth-watering Taskinha Special-pork pieces marinated in garlic and wine.

There is also the tasty traditional bread, Bolo do Caco, from the renowned Taste of Madeira; Pasteis de Nata, Farturas and coffee from Café Streito ; delectable to-go Espetada from the Espetada Van and zingy caipirinha mixed courtesy of Zona Velha and much more.
Whilst you wait for the Festival to kick off, tantalise your tastebuds by indulging your cooking skills and whipping up a traditional Portuguese favourite yourself.
Portuguese chourico, beans and rice

Ingredients
- 2 cups of water
- 1 cup of uncooked white rice
- 2 tablespoons olive oil
- 2 dried chourico sausage, halved lengthwise and cut in to ¼ slices
- ¼ Spanisg onion, finely chopped
- 3 cloves garlic, minced
- 1 ½ cups tomato sauce
- ½ teaspoon red pepper flakes
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
- ½ can Fava beans, rinsed and drained
Directions
Bring the water to a boil in a pot; stir the rice into the boiling water, reduce heat to low, place cover on the pot, and allow the rice to cook until all the moisture is absorbed, about 30 minutes.
As the rice cooks, heat the oil in a skillet over medium heat. Cook the chourico in the hot oil for 2 minutes. Add the onions and garlic to the sausage and continue cooking until the vegetables are soft and the chourico has browned, 5 to 7 minutes.
Stir the tomato sauce into the chourico mixture. Reduce heat to low. Season with the red pepper flakes, Italian seasoning, salt, and pepper; simmer until thoroughly heated, 10 to 15 minutes. Stir the fava beans into the mixture and continue cooking just long enough for the beans to heat, 2 to 3 minutes. Serve over rice.
